No Fuss Lamb Curry

Serves: 3-4
Temperature: Gas mark 3, 170oC, 325oF
Cooking time: Approximately 1½ - 2 hours

Ingredients
Damn Delicious Diced Lamb
Can chopped tomatoes
Stock
Red lentils
Onion
Garlic
Medium curry paste
Tomato purée
Potatoes
Cauliflower
Fresh coriander

Cooking Method
In a large casserole dish place 450g (1lb) Damn Delicious Diced Lamb, 400g can chopped tomatoes, 300ml (1/2 pt) stock, 75 g (3oz) red lentils, 1 onion, chopped, 1 clove garlic, crushed, 30ml (2 tbsp) medium curry paste , 15 ml (1 tbsp) tomatoe puree, 2 potatoes, peeled and cut into small cubes, 175g (6oz) cauliflower, cut into small florets. Mix well, cover and place in a preheated oven for 1 - 1 1/2 hours until the meat is tender. Sprinkle with fresh coriander and serve.
